The Godfather

“Tuesday’s With Tim” is reporting LIVE on location this week in his home state of Wisconsin!  It has been a while since the last time I was off island, so the first thing I did was get my Venti Caramel Macchiato from Starbucks and a cheeseburger with no mustard from McDonalds!  I am curious, if you lived on Nantucket, a place without any popular franchises, what would you miss the most?

I am here in Wisconsin for a very special occasion.  My best friends welcomed a beautiful baby boy into the world and his baptism was this past Sunday!  I was honored when they asked me to be his godfather a couple months ago. So, everybody, I would like you to meet my godson:

What in the world do godparents give for baptism gifts? You know how some people have phobias of being in crowds or of spiders, I have two very specific phobias.  1 – Will I get good pictures of the event? (My husband used to say that I only went places for the pictures!) and 2 -Can I come up with a creative gift idea?

I racked my brain what to get Parker for his baptism and I was stumped!  After searching the internet, I realized that I would have to come up with my own idea because all the traditional gifts were not quite what I was looking to do.  I decided to write Parker a letter. In the letter, I give him some advice as he grows up!  I would like to share it with you all, just in case you have been at a loss for a baptism gift for your godson or goddaughter.

Dear Parker,

I was truly honored when your parents asked me to your godfather.  I met your mom 12 years ago in college and we have been friends ever since.  I watched your mom marry your dad 3 years ago and now, here I am today at your baptism. My gifts to you on this special day have a lot of meaning for me and I hope someday they mean something to you.  Ever since I was young, I loved to read and maybe someday you will too.  So, here are some of my favorite books that I have read through out my life.

read

Dear Zoo and Dr. Seuss’s ABC – These were my favorite books when I was a baby.  The Wonderful Wizard of Oz – This was one of the first books I read all by myself and I still love it.  It taught me to dream, but that there was no place like home.  Harry Potter – Even though I read this in college, I hope someday you enjoy Harry Potter and his adventures as much as I did.  Pillars of the Earth – This is one of my favorite books as an adult.  I thought it was appropriate today because its all about building a church!

You may not know this, but one of my favorite things about your Dad is that he likes to write letters.  Your Dad is a great writer and maybe someday, you will like to write too…  So, here are some crayons to scribble with, here are some markers you can use when you first learn to write your name, here are some pencils to take to your first day of school, and lastly, here is a special pen with your initials on it. Maybe, when you are all grown up, you can write me a letter with it, just like your Dad!

The third thing I want you to try and do as you grow up is to always plan for your future. Here is a piggy bank to save your quarters when you help your Mom and Dad out around the house.  Here is a wallet to put your cash in when you get your first job, and here is a savings bond to use for college.  Saving money is important, but also treat yourself every once in awhile.  I put some quarters in your piggy bank for some candy and I put some cash in your wallet to maybe use on your first date.

Lastly, I give you this cross to put in your room as a symbol for many things.  First, as a symbol of today and your baptism.  Also, I hope this cross reminds you to always love and respect others, no matter their differences, to never judge anyone for those differences and to always be yourself!

crossandletter

I can’t wait to watch you grow up Parker.  I will always be here for you if you need anything and I hope every time you pick up one of these books, or color with your crayons or count your quarters or look at the cross in your room, you know how much you are loved..

Love Always,

Uncle Tim

If Parker could talk he would probably say “Dude with the bowtie! – What do you expect me to do with any of these gifts?” I am only three months old and I still soil myself 10 times a day!”  What I liked about this gift idea though was that it represents Parker’s whole life.

Welcome to the world Parker! I am already so proud of you!

See you next Tuesday! :)

My problems with Nantucket

I am back on the mainland.

If my life were a movie, the soundtrack to my trip home would have been that En Vogue song… you know… “Back to life, Back to Reality.”  Not the whole song.  Just that verse.  On repeat.  Depressing, huh?

Anyways.  On my way home, I thought a lot about Nantucket and here are my problems with it.  I present to you….

Got 99 Problems and Nantucket is all of them.

Problem # 1 –  The moment you step foot on the magical little island called Nantucket, you immediately and completely feel transported to another universe.  You feel removed from the rest of the world.  It truly is an incredible feeling.  You think to yourself… where have I have landed… Heaven?  Do not be deceived!

Transported to Nantucket

**Warning: If you go to Nantucket, you will most likely lose all concept of reality, as well as lose all contact with your friends in the real world.  And that can cause problems.

Problem # 2 – My Nantucket road rage was off the charts this summer.

Worse than my LA road rage.

I have a problem with most bicyclists, pedestrians and sometimes duck mamas and their little ducklings. Just kidding…I’m not heartless! They are so cute!  We brake for ducks here!

NOTE TO ALL THE SELF AWARE, SINGLE FILE ENTHUSIASTS ON THE ISLAND… You can stay.  I will wave and smile at you and praise your respect for us cars on the island!

Problem # 3 – Nantucket has the most incredible waterfront dining.  It’s ridiculous.

WATER FRONT DINING
**Spoiler Alert:  You will be spoiled.  Everywhere you eat after Nantucket will be boring.

Problem # 4 – Nantucket has a lobster roll that you literally dream about all day long…

Thanks a lot, Cru Restaurant.

LOBSTER ROLL

For a whole day, I contemplated whether or not I needed to go see someone because the whole day before I could not stop thinking about a lobster roll.  An amazingly divine and buttery brioche roll that holds beautiful pieces of lobster tail that has been drizzled/coated with warm butter. O. M. G. Delicious.

I’ll skip over Problem# 6 – 98…

Problem # 99 – My Nantucket problems really aren’t problems.  And that’s a problem!

With all that said, I guess what I really want to say is that I miss it.  Everything about it.  I want to scream from the rooftops (like a cheesy romantic movie)… I LOVE YOU, NANTUCKET!

i love you nantucket

P.S. I hope I didn’t come across as bitter or snobby.  That was not my intention. ;)

Peanut Butter and Jelly French Toast

pbjfrenchtoast1

I have always been more of a salty/savory food person than a sweet food person. To me, a bag of potato chips sounds way better than some chocolate. But, don’t get me wrong…I love chocolate too!

When it comes to breakfast, my favorite dish is Eggs Benedict (as you probably know from Allie’s and my quest for the best breakfast). But, what I have always struggled with is wanting the sweet dishes too. Like pancakes and French toast. And when I do give in to my sweet tooth and order up the French toast, I usually regret it by the second slice of toast because it is too much of the same sweet bite.

However, I am happy to say that I have found a solution to my struggle!! French toast sandwiches. Savory and sweet to fulfill both of my cravings.

For my first attempt at a French toast sandwich I played it safe with a peanut butter and jelly filling. And it did not disappoint! I mean that syrup soaking into the bread mixed with the peanut butter. I could have died and gone to heaven.

Here’ what you do:

Ingredients:

1 cup of half and half

3 large eggs

2 tablespoons of warmed syrup

1/4 teaspoon of salt

Dash of cinnamon

Splash of vanilla

A few table spoons of butter

Peanut Butter

Jelly

Bread (Challah is my favorite to use for French Toast)

Directions:

Mix half and half, eggs, syrup, salt, cinnamon and vanilla into a mixing bowl. Pour the mixture into a baking pan. Slice bread and place the bread into the baking pan to soak for 30 seconds on each side. Transfer the bread to a cooling rack that is on top of a baking sheet (to catch the drips of batter). Keep the bread there for 1-2 minutes on each side. Then, heat up a pan and melt a tablespoon of butter. Cook bread for two minutes on one side. Flip and cook two minutes on the other side. Flip back and cook the first side again for two more minutes. Remove from pan and spread the peanut butter and jelly on the twice cooked side of bread. Put the two pieces of bread together to make a sandwich. Then, place back into the pan to cook for two more minutes on each side. Serve with warmed maple syrup and enjoy every last bite!

(If you are making more than one sandwich, turn the oven on to 375 and place the finished sandwiches in the oven to keep warm while you are cooking the rest of the sandwiches.)

And that’s it! Pretty easy right? I can’t wait to make this again and to try out different kinds of French Toast sandwiches.
